Job Description
Maha, the flagship of celebrated chef Shane Delia and Melbourne's top modern middle-eastern inspired restaurant is seeking a Head Sommelier to drive a highly engaged beverage service, lead the curation of an award-winning wine list, and support the Delia Group toward more success.
The Role
- The Head Sommelier will be tasked with overseeing the wine list and beverage service at Maha.
- The objective is to create:
- - a balanced and adventurous listing of both local and international producers;
- - an exciting and rotating by the glass program of highly reputal wines at approachable prices
- - and a range of curated pairings that amplify the Maha experience and the unique flavours of our menu.
Accountabilities
- Play a key role in leading Maha's restaurant, focused on providing exceptional beverage service.
- Overseeing the beverage offering in Maha including composition and maintenance of the wine list.
- Meet or exceed the financial targets set out by the Delia Group - beverage costs, margins, and spend per head
- Plan and deliver appropriate training to empower and upskill our dedicated team to ensure growth.
- Controlled inventory management including stocktake, variance reporting, ordering, purchase orders, invoices, and PoS set up
- Collaborate with senior and group management towards the betterment of service, menu offering, and the overall guest experience.
As part of the senior management team the Head Sommelier will be key in demonstrating our mission statement which is ‘to exceed expectations by delivering exceptional experiences’. They will demonstrate our core values of integrity, accountability, people focus, and continual improvement.
The Head Sommelier will have a deep and ongoing support from the Group Inventory Manager, ensuring the implementation of appropriate processes and procedures including but not limited to; stocktaking, variance reporting, ordering, processing invoices, and beverage menu maintenance.
Experience Required
- A minimum two years’ experience in a similar role is required.
- Advanced WSET and CMS qualifications will be highly regarded.
The successful candidate will have:
- Experience in developing wine lists, and the management of a large cellar.
- A passion for hospitality with a proven career within fine-dining restaurants.
- Demonstrate a passion for wine and hold WSET / CMS qualifications
- Knowledge of the Australian and international market
- A friendly, outgoing, and professional attitude
- A keen eye for detail, with a strong work ethic
- Exceptional organizational and time management skills
- The flexibility to work weekends and public holidays
The Venue
Maha has a 120-seat dining room, two private dining rooms, and a neighbouring cocktail bar with an indulgent private dining space. The Delia Group also encompasses two inner suburban wine bars, food retail brands at Melbourne airport, and ongoing collaborations with all of Melbourne’s major events and business community.
