Recent years have seen the opening of a new multi-million dollar contemporary dining precinct within the Club to expand facilities further for Members and their guests. Tattersall’s continuing growth and evolution is hinged upon exciting initiatives that instil the Club’s brand virtues on new male and female audiences of tomorrow.
Our priority is to develop a highly engaged and high-performing food and beverage team and delight our members by creating exceptional food and beverage driven experiences. Our new contemporary dining precinct will feature a brand new 100 seat dining room and bar with a stunning 30 seat private dining room. This space will compliment our existing heritage listed 120 seat Members Dining Room and large Members Bar.
The Role
We are currently recruiting for an enthusiastic and hands-on Sommelier, to be the face of wine across the Club. Working hand in hand with our management team and our member’s Wine Advisory Group, the Sommelier will be responsible for assisting in the development of the wine program across the Club, including but not limited to, creating wine lists, assisting in developing events, promotions, and partnerships.
Whilst acting as the face of the wine program, the Sommelier will be a role model for our service values and be highly visible in outlets during peak periods of business, as well as the training and development of wine knowledge and service skills in the F&B team. Key duties
- Drive the sales and enjoyment of wine aligned with the Clubs wine strategy.
- Lead teams to improve product knowledge to drive sales of beverage products
- Manage cost controls and reportage
- Provide input to development of event programme which drives existing and prospective member attendance
- Create wine lists as and when required
- Partner with Operations and Restaurant Mangers and Events teams for functions and events
- Sustaining the ‘Tattersall’s Brand’ through Service Excellence in all aspects of the Member Experience
- Work with Store Supervisor on the ordering of wines and maintaining of inventory - This duty involves forecasting and keeping track of which drinks are most in demand.
- Manage Staff Training and Schedules - training and scheduling of bar and cellar team with mixing and serving drinks.
- Member of the Clubs Wine Advisory Group (WAG)
- Take reasonable care for your personal health and safety and safety of other team members, contractors, Club members and visitors through co-operation with management and compliance with relevant legislation
The Person:
The successful candidate will be service oriented and be able to be self-motivated to achieve KPIs and goals, under the leadership of the Head of Service Delivery. You will bring your ideas and experience to the role, as well as demonstrating a solid understanding of wine, wine buying and the wine industry as a whole.
The ability to foster close and positive working relationships with staff, key suppliers and Members is essential as are sound verbal and written communication skills.
The role requires a good level of physical fitness and involves weekend and evening work therefore a flexible approach to working hours is mandatory. Your hands-on approach to managing the wine program will ensure your success, as will your willingness to go the extra mile in order to deliver results.

- Customer Service: Providing exceptional service with a warm and welcoming attitude, ensuring members and guests have a memorable and enjoyable experience.
- Experience in selling and promoting wine and wine related programs within a high volume hospitality environment.
- Ability to work under pressure and be solutions oriented
- Excellent communications skills both written and verbal
- Impeccable grooming and personal presentation
- Compliance: Adhering to all relevant health and safety regulations, as well as responsible alcohol service guidelines
